Pumpkin Oatmeal Bake
Here's a a literal hug in a bowl with all the flavors of fall & Thanksgiving- with a bonus serving of nutrition! This guilt-free dessert can also double as a "Black Friday" power breakfast!
¾ cup pumpkin puree
¼ cup unsweetened applesauce
2 Tbsp flax meal
5 Tbsp liquid egg whites
⅜ cup shredded unsweetened coconut flakes
1 cup unsweetened vanilla almondmilk
2 Tbsp melted coconut oil
3 Tbsp organic maple syrup
2 tsp pumpkin pie spice
1 tsp cinnamon
1 tsp vanilla extract
½ tsp sea salt (fine grain)
½ cup oats
2 scoops collagen peptides (optional)
Preheat oven to 375. Spray a 9 inch square or round baking dish with non-stick spray
Combine flax with egg whites in a small bowl and allow to sit for 10-15 minutes
In a medium bowl, mix all remaining ingredients, then add flax/white mixture and stir to combine
Pour batter into baking dish and bake 40-45 minutes, until just set in the middle.
Baking time can be slightly longer for more of a cake texture, or shorter for more of an oatmeal texture. Garnish with a drizzle of maple syrup, whip cream, or fresh fruit!
Ready in 50 minutes
