Pumpkin Oatmeal Bake

Here's a a literal hug in a bowl with all the flavors of fall & Thanksgiving- with a bonus serving of nutrition! This guilt-free dessert can also double as a "Black Friday" power breakfast!




Ingredients

  • ¾ cup pumpkin puree

  • ¼ cup unsweetened applesauce

  • 2 Tbsp flax meal

  • 5 Tbsp liquid egg whites

  • 30g walnuts

  • 30g pecans

  • ⅜ cup shredded unsweetened coconut flakes

  • 1 cup unsweetened vanilla almondmilk

  • 2 Tbsp melted coconut oil

  • 3 Tbsp organic maple syrup

  • 2 tsp pumpkin pie spice

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • ½ tsp sea salt (fine grain)

  • ½ cup oats

  • 2 scoops collagen peptides (optional)

Preparation

  1. Preheat oven to 375.  Spray a 9 inch square or round baking dish with non-stick spray

  2. Combine flax with egg whites in a small bowl and allow to sit for 10-15 minutes

  3. In a medium bowl, mix all remaining ingredients, then add flax/white mixture and stir to combine

  4. Pour batter into baking dish and bake 40-45 minutes, until just set in the middle.

 Tips

Baking time can be slightly longer for more of a cake texture, or shorter for more of an oatmeal texture.  Garnish with a drizzle of maple syrup, whip cream, or fresh fruit!
