No Bake Fall Balls

We all love a good ball...(hehe)...Ball jokes and giggles aside, those little guys are a portable, delicious way to tame a sweet tooth, and if made the right way, can also offer a big nutritional bang for their buck. I put the "pumpkin spice everything" rule to work in this a yummy fall flair to these fast & easy no bake snacks!


  • ½ cup peanut butter (or other nut butter of choice)

  • ¼ cup pumpkin puree

  • ⅛ cup organic honey

  • ¼ cup unsweetened applesauce

  • ⅛ cup chia seeds

  • 1 ½ cup oats

  • 2 Tbsp mini chocolate chips (Enjoy Life used in recipe)

  • 1 tsp vanilla extract

  • ½ tsp cinnamon or pumpkin pie spice


  1. Add nut butter, pumpkin, applesauce, chia seeds, vanilla, and cinnamon to a mixing bowl, and combine well.

  2. Add oats and mix to form a sticky batter.

  3. Fold in chocolate chips

  4. Using a mini ice cream scoop, or table spoon scoop a portion into your hand, roll into a ball, and repeat with remaining batter.


Batter will be sticky to work with, but finished balls can be dusted with cocoa powder, unsweetened shredded coconut, or cinnamon for a cleaner finish.  Store in refrigerator.
