Fit French Toast

French toast is one of those breakfasts we may view as just a fond memory of childhood, or life before we started counting macros, or "cleaning up" our nutrition. I'm here to tell you today, that you can still have the sweet, with just a touch of savory, warm, chewy toasty goodness you remember- with just a few grown up twists- that even the youngest critics will be sure to love!




Ingredients

  • 1 slice whole grain or gluten free bread (Dave’s Killer 21 Grains & Seeds Organic used for recipe)

  • 3 oz liquid egg whites

  • 1 large egg

  • 2 oz unsweetened vanilla almond milk

  • Splash vanilla extract

  • 50 grams mixed berries (raspberries & blueberries used for recipe

  • Dash sea salt & cinnamon

  • Spray olive, avocado, or conconut oil

Preparation

  1. Lightly spray a medium pan with olive, avocado, or coconut oil and place over medium heat

  2. Mix egg , egg whites, almond milk, vanilla, and cinnamon together in a medium bowl

  3. Soak bread in egg mixture so it is covered on both sides, then add to warmed pan

  4. Pour extra egg mixture over bread into pan

  5. Cook until lightly browned on each side, about 5-7 minutes.

  6. Top with a dash of cinnamon and sea salt and fresh berries

Tips

Frozen berries can work well here too- just pop them in the microwave to get warm and pour over french toast!   Add organic turkey or chicken sausage to make this a more filling breakfast!
