Best Butternut Squash Side

Fast & versatile, pre-spirialized noodles make this one pan wonder an easy way to pack some nutrition into your side dishes!

  • 1 container butternut squash noodles (approx 600 grams)

  • 1 Tbsp oil (olive, avocado work best)

  • 3 large mushrooms, sliced

  • 2 Tbsp sundried tomatoes (not packed in oil)

  • 3 cups shredded kale, arugula, or a combination

  • Other veggies as desired

  • Your favorite spice blends to taste; I used garlic, basil, oregano, salt, pepper, & thyme


  1. Heat oil in a medium saute pan, and add butternut squash

  2. Sautee on med/high heat and stir occasionally as squash becomes tender

  3. Add sliced mushrooms, sundried tomatoes, kale, and any other veggies of choice

  4. Continue to stir together until veggies reach desired texture


This is an easy, versatile side dish that can take on the flavors of just about anything you want to pair it with.  Butternut squash can be difficult to prep, so I think it’s worth springing the extra dollar for the pre-spiralized noodles!  This would also make a great base for a vegetarian main course, just add beans for protein, and a green salad on the side!
